Balsamic Glazed Zucchini

 

 

I'm sure you wouldn’t think Zucchini, or any other vegetable, could taste like candy, but a good, low acid Balsamic Vinegar transforms a plain vegetable into a ‘can’t get enough of it’ treat. And it’s incredibly easy to make. 

INGREDIENTS:

1 pound or 4-5 cups cubed or sliced zucchini

1-2 Tablespoons flavored Balsamic Vinegar (only 4% acid) or Balsamic Vinegar of your choice

1 Tablespoon your favorite mustard

INSTRUCTIONS:

Slice the zucchini lengthwise, then roll a quarter turn and slice lengthwise again so your zucchini is cut into 4 long sections. Then cut them into ½ to 1” cubes by cutting crosswise. You can also slice into rounds, if its easier. Place cubes or rounds into a medium mixing bowl. Drizzle Balsamic Vinegar and mustard over zucchini and toss until all pieces are coated. 

Roast in a 400 degree oven for 25-35 minutes. Or you can use an air fryer for 15 minutes. Fifteen minutes in the air fryer is just perfect to me, as they’re still a little crunchy, yet roasted on the outside. But you can cook until soft if you prefer by adding more time.

Removed from oven or Air Fryer and enjoy. If you’re learning to like a higher volume of vegetables, this is a great place to start. I’m sure kids will enjoy them also.
